How to make
- 1 medium-sized watermelon
- Water to soak the rind
- 25ml limewater (available at a pharmacy)
- 500g sugar
- Another 750ml water
- 30ml lemon juice
Slice the watermelon in rounds of about 2cm thick. Cut away the pink flesh. Peel away the green peel and discard that, leaving the white rind (which you will use for this recipe).
Prick both sides of the rind with a fork and place in a mixture of water and limewater. Soak overnight.
Remove the rind from the limewater mixture and rinse. Place in fresh water and leave to soak for two hours.
For every 500g of rind, use 500g of sugar and 750ml of water.
Boil the water, lemon juice and the sugar until the sugar has dissolved. Add the rind slowly while the syrup is still boiling.
Boil the rind for one to two hours until translucent and the syrup has thickened.
Place in sterilised jars and seal while still hot.
