Stuffed pork fillet

How to make stuffed pork fillet

INGREDIENTS:

  • 1 x 500g pork fillet
  • 1 large leek, sliced and washed
  • 100g mushrooms, sliced
  • 50g sundried tomatoes, sliced
  • 2 feta cheese rounds, crumbled

METHOD:

Preheat the oven to 180C.

Clean the pork fillet of any sinew. Make a pocket in the fillet by cutting lengthways down the centre, taking care not to cut right through.

Fry the leeks and the mushrooms in a little oil. Spread the fried leeks and mushrooms in the middle. Top with the crumbled feta and the sundried tomatoes.

Bring the two sides of the fillet together and wrap in foil. Wrap tightly so that the filling will stay in place.

Place the rolled-up fillet on a baking tray and into the prepared oven.

Bake for 30 minutes, or until the fillet is cooked. Remove from the foil and slice to serve. Serve the fillets with potato wedges and a side salad.
