How to make pork fillet wrap with ginger and pineapple

INGREDIENTS:

  • 250g pork fillet, cut into strips
  • 3cm ginger, crushed
  • 25ml honey
  • 15ml rice vinegar
  • 2 rings pineapple, finely chopped
  • 4 to 8 wholewheat wraps
  • 100ml hummus
  • Carrots, sliced
  • Cucumber, sliced
  • Avocado, sliced
  • Red cabbage, shredded
  • Lettuce, shredded

METHOD:

Cook the pork strips in a hot frying pan until cooked through.

Mix together the ginger, honey, vinegar and pineapple and then put the cooked pork into this mixture.

Mix well and set aside to infuse.

Then you can put some hummus, vegetables and the pork strips into each wrap and fold - or allow guests to help themselves.

SERVES: Four to six

TIME: 20 minutes
