Stuffed sweet potato
How to make stuffed sweet potato
- 2 large sweet potatoes
- 10 slices salami, chopped
- 400ml cream cheese
- 3 spring onions, chopped
- 100g broccoli, blanched and chopped
- 50ml grated cheese
- Alfalfa sprouts
Wrap the sweet potato in foil and place in the oven for 30 minutes, or until cooked through. Remove from the oven and allow to cool a little.
Meanwhile, mix together the salami, cream cheese, spring onions, broccoli and grated cheese.
As soon as the sweet potatoes are cool enough to touch, cut them open lengthwise and scrape out the flesh.
Mix the flesh with the filling and scoop back into the skins. Top with alfalfa sprouts and serve.
