Italian-inspired: Caprese Tower
How to make caprese tower
- 75g basil pesto
- 30ml extra virgin olive oil
- 4 rosa tomatoes, sliced
- 200g buffalo mozzarella balls, sliced
- 30ml reduced balsamic vinegar
- 20 capers
Mix the basil pesto and the olive oil together. Then strain out the olive oil, reserving it to decorate the plate.
Layer the slices of mozzarella and tomato with pesto in between.
Drizzle the green oil reserved from the pesto, the reduced balsamic and three blobs of honey mustard dressing on the plate.
Add a few capers and garnish with basil.
