How to make butternut and courgette stack
INGREDIENTS:
- 500g butternut cubes
- 15ml chilli avocado oil
- Sprinkle of cinnamon and nutmeg
- 1 each green, red and yellow pepper, seeded and cut into chunks
- 8 courgettes, sliced
- 100g ready-made cheese sauce
- 350g ricotta cheese
- Handful of rocket to garnish
METHOD:
Place the butternut cubes in a roasting dish, drizzle with the oil and sprinkle with the cinnamon and nutmeg. Season well and roast for 30 minutes.
Meanwhile, grill the peppers and courgettes until cooked through.
Heat the cheese sauce in a saucepan and add the ricotta.
Heat through, then layer the ingredients on the plate as in the picture.
Serve immediately, garnished with fresh rocket.
