How to make chicken and couscous
INGREDIENTS:
- 30ml soy sauce
- 30ml chutney
- 30ml apricot juice
- 4 chicken breasts, each sliced into 4
- 250ml vegetable stock
- 250ml couscous
- 1 small red pepper, finely diced
- 2 tomatoes, finely diced
- 15ml fresh thyme leaves
METHOD:
Mix together the soy sauce, chutney and apricot juice. Place the chicken slices in this marinade for a few minutes.
Put the stock on to boil. Add the couscous and remove from the heat. Let it rest for 15 minutes.
Preheat a griddle pan. Remove the chicken pieces from the marinade and shake off the excess. Lower the chicken pieces into the griddle pan and grill for two minutes a side.
Stir the chopped red pepper, tomatoes and thyme into the couscous using a large fork to loosen the granules. Season and serve with the grilled chicken.
