Speedy Roast Lamb Steaks

Ingredients:

Handful fresh mint leaves, finely chopped + 6 plump lamb steaks + salt and freshly ground black pepper + 85ml ( cup) mint jelly, lightly warmed

Method:

Preheat the oven to 180ºC. Rub the fresh mint into the lamb steaks, massaging well, and season generously. Place the steaks in roasting pan without overlapping. Roast for 15 minutes. Remove from the oven and baste the top of each steak with mint jelly. Return to the oven and roast for 10-15 minutes until the steaks are cooked and the jelly is lightly caramelised. Serve with boiled new potatoes or roast potatoes. Serves 6
