Thai Pomelo and Prawn Salad with Lime Dressing
An excellent combination of seasonal ingredients such as avocado, pomelo and lime.
Serves 6
Ingredients:
1 small red onion, finely sliced
1 pomelo (or use 2 grapefruit) peeled, pith removed and segmented
8 spring onions, finely sliced
Handful fresh mint leaves
Handful fresh coriander leaves
500g small peeled prawns, cooked
2 avocados, peeled, sliced and tossed in a little lemon juice
1 red chilli, seeded and finely sliced
60ml ( cup) peanuts, roughly chopped
Dressing:
1 clove garlic, crushed
15ml (1 tbsp) palm or brown sugar
Zest and juice of 3 limes
25ml (5 tsp) fish sauce
30ml (2 tbsp) sweet chilli sauce
Method:
On a serving platter, combine the onion, pomelo, spring onions, mint and coriander. Add the prawns and avocado and sprinkle over the chilli and peanuts. Mix all the ingredients for the dressing and pour over the salad just before serving.
