Reader Recipe: Smoked chicken salad with pesto

I invented this easy, convenient recipe because I'm busy with my final year of a Bachelors in Civil Engineering and living in a commune, so pickings are slim and nobody wants to spend lots of time preparing or cleaning up afterwards. I like using smoked chicken in anything from salads and sandwiches to pies and pasta.

Serves 2

Ingredients:

2 smoked chicken breasts, thinly sliced

300g green beans, steamed and drained

8 cherry tomatoes

8 baby potatoes, boiled and drained

1 onion, finely sliced

Dressing:

10ml (2 tsp) finely grated lemon zest

45ml (3 tbsp) lemon juice

125ml (½ cup) ready-made coriander pesto

45ml (3 tbsp) sunflower oil

Method:

Toss chicken, beans, tomatoes, potatoes and onions in a glass bowl. Whisk the dressing ingredients together until well combined and pour over the salad. Toss lightly, cover and refrigerate for 2-3 hours before serving.
