Miss Vy's Asian BBQ Chicken
BBQ Chicken and Lime Leaf recipe all the way from Hoi An, Vietnam
Serves 4
Ingredients:
800g boneless chicken thighs, skin off
5ml (1 tsp) sea salt
15ml (1 tbsp) sugar
2.5ml ( tsp) coarse black pepper
2.5ml ( tsp) five-spice powder
15ml (1 tbsp) ground turmeric
80ml ( cup) fresh lemon grass, pounded
4 lime leaves, finely sliced
2 cloves garlic, pounded
2 shallots, pounded
5ml (1 tsp) dried chilli flakes
5ml (1 tsp) sesame oil
15ml (1 tbsp) fish sauce
8 wooden skewers, soaked in waterfor 1 hour
Method:
Cut thighs up into 16 pieces. Place in a bowl. Add salt, sugar, pepper and five-spice powder. Mix well. Add remaining ingredients and mix well. Marinate for 30 minutes. Thread 2 pieces of chicken on each skewer. Grill for 4-5 minutes on each side.
