Dinner+Dash: Party fillet

Quick and easy - serve up a sumptuous fillet in a dash

Ingredients:

1 medium beef fillet + 60ml ( cup) olive oil + salt and pepper + wholegrain mustard + 30ml (2 tbsp) butter + 125g gorgonzola or other blue cheese, crumbled + 125ml ( cup) cream + 30ml (2 tbsp) brandy, heated + freshly chopped parsley, to serve

Method:

Slice the fillet into 8 portions and brush each slice on both sides with half the oil. Season and spread with mustard on both sides. Heat the remaining oil and butter in a heavy-based pan and fry the steaks for about 3-5 minutes per side (for medium rare). Set aside to rest. Add the crumbled cheese and cream to the pan and stir until the cheese has melted. Add the warmed brandy and ignite. Once the flames cease, pour the sauce over the steaks, garnish with parsley and serve with new potatoes and peas or beans. Serves 8.
