Reader Recipe: Crispy Man Chicken

There are certain cooking ideas that only men would think of, and this is one of them. It is to the point, uncomplicated and really good. You may never go back to normal roast chicken.
Serves 4-6
Ingredients:
1 large free-range chicken
60g (1 cup) fresh breadcrumbs
Large handful oats or crumbled Weetbix
Salt and pepper
Spices of your choice
45ml (3 tbsp) milk
40g ( cup) cake flour
1 large egg, beaten
Method:
Wash the chicken and pat dry. Throw the breadcrumbs, oats, salt, pepper and spices of your choice in a plastic bag and shake to mix. Rub the chicken down with milk, coat it with flour and smear it with the egg, then place it in the plastic bag and toss it around to give it a good crumbing, pressing down all over so the crumb mixture sticks. Place in a well oiled pan and roast in the oven at 190°C for 80 minutes or till crispy and cooked through.
