Dark indulgent chocolate and walnut brownies
Earn brownie points with chocolate squares
A little coffee, chopped walnuts and plain chocolate chips give these brownies a rich flavour.
Ingredients:
- 350g chocolate
- 225g butter
- 30ml instant coffee
- 30ml hot water
- 225g castor sugar
- 3 large eggs
- 5ml vanilla essence
- 75g self-raising flour
- 175g chopped walnuts
- 225g chocolate chips
Method:
Preheat the oven to 190C.
Grease a 30cm x 23cm baking tray and then line the base with baking paper.
Break the chocolate into small pieces and melt slowly with the butter in a bowl set over a pan of hot water, stirring occasionally. Leave to cool.
In a large bowl, dissolve the coffee in the hot water. Add the sugar, eggs and vanilla essence. Gradually beat in the chocolate mixture.
Fold in the flour, walnuts and chocolate chips. Pour the mixture into the prepared tin.
Bake in the preheated oven for about 40 to 45 minutes or until the brownies have a crusty top and a skewer inserted into the centre comes out clean.
Leave the brownies to cool in the tin. Cut into squares. Store in an airtight container.
