Green beans and balsamic-roasted red onions

Avocado Magazine | 27 September, 2010 00:500 Comments

Know your roasted balsamic onions

The roasting juices from the onions become the sauce for the beans.

Ingredients:

  • 2 large red onions, peeled and quartered
  • 50ml olive oil
  • 50ml balsamic vinegar
  • 750g green beans, top-and-tailed

Method:

Arrange the onion quarters on a small baking tray.

Drizzle the olive oil and balsamic vinegar over onions and season well with salt and pepper.

Toss and roast them for 10 to 15 minutes in an oven set to 200C .

Meanwhile, blanch the green beans in salted water until tender but retaining their bright-green colour.

Drain and transfer to a serving dish.

Top with the roasted onions, ensuring that all the juice pours over the green beans.

Time: 20 minutes
