Lime and chilli salted sweetcorn Ingredients4 mealies, leaves removed100g butterJuice and zest of 3 limes10ml (2 tsp) salt1 chilli, seeded and finely chopped50g parmesan cheese, gratedMethodBlanch the mealies in unsalted boiling water for a few minutes.Drain and set aside.Mix the butter with the lime zest and juice, salt and chilli.
