Date and walnut loaf Ingredients250g dates, chopped5ml (1 tsp) bicarbonate of soda80ml butter200g (1 cup) sugar1 extra large egg300g (2.5 cups) cake flour5ml (1 tsp) baking powder5ml (1 tsp) vanilla essenceTopping:75ml (5 tbsp) sticky brown sugar30ml (2 tbsp) butter30ml (2 tbsp) fresh cream60g walnuts, choppedMethod:Pour 250ml (1 cup) of boiling water over the dates and add the bicarbonate of soda.
