Cherry clafoutis

A clafoutis is a super-easy baked French dessert; it's traditionally made with fresh cherries and served with cream

Serves: 4-6

Ingredients:

400g cherries , stoned

Butter for dish plus 30g butter, melted

Sugar for dish plus 100ml (85g) sugar

2 jumbo eggs

90g (180ml) cake flour, sieved

150ml milk

5ml (1 tsp) vanilla essence

Icing sugar, for dusting

Method:

1) Preheat the oven to 200°C. Butter a 20cm baking dish or similar-sized cake pan and sprinkle with sugar.

2) Spread  cherries  over base of dish.

3) In a bowl, cream 100ml sugar with the eggs. Mix in the flour, milk and vanilla essence. Stir in 30g melted butter.

4) Pour the batter over the  cherries  and bake for 30-40 minutes until puffed and golden.

5) Cool slightly, dust with icing sugar and serve with cream if desired.
