Spiced roasted chickpeas

Stash a can of chickpeas in your store cupboard and you can whip up this easy-to-make bar snack whenever unexpected guests pop over for a drink.

Stash a can of chickpeas in your store cupboard and you can whip up this easy-to-make bar snack whenever unexpected guests pop over for a drink

Serves: 6-8

Difficulty: Easy, 45 minutes

Ingredients:

2 x 400g cans chickpeas, rinsed, drained and well dried (discard loose skins)

30ml (2 tbsp) olive oil

5ml (1 tsp) salt flakes

5ml (1 tsp) smoked paprika

5ml (1 tsp) ground cumin

5ml (1 tsp) ground coriander

5ml (1 tsp) chilli powder (optional)

Method:

1) Preheat the oven to 200°C.

2) Spread the chickpeas in an even layer on a baking sheet. Drizzle with olive oil, sprinkle with salt and shake to coat well.

3) Roast for about 30 minutes, stirring every 10 minutes until golden and crispy. Remove from the oven.

4) Mix the rest of the spices together and sprinkle over the chickpeas. Toss to coat evenly and serve warm.
