Crispy sweet potato wedges

Crispy oven roasted sweet potato wedges tossed in olive oil, salt, pepper and paprika are delicious and much healthier than fried potato chips.

Serves: 6

Difficulty: Easy, 40 minutes

Ingredients:

600g large sweet potatoes

Large pinch of salt and freshly ground black pepper

40ml olive oil

2ml (¼ tsp) paprika

Method:

1) Cut the sweet potatoes into 2cm thick wedges about 5cm long.

2) Place potato wedges in a pot with a good pinch of salt, cover with water and bring to the boil. Allow to boil for 8 minutes.

3) Drain the water and return the pot with the sweet potatoes to the heat and allow them to steam dry.

4) Place the potatoes in a large roasting tray in a single layer and add the olive oil, paprika and seasoning.

5) Place in a preheated oven at 200°C for about 30 minutes and bake until golden and crispy.

6) Serve on a platter with guacamole.
