This speedy dessert using simple ingredients was inspired by a dish known as Zambezi Mud. Transformed from penny-wise boarding-school food into something more luxurious, it is delicious
Serves: 4-6
Ingredients:
45ml (3 tbsp) cornflour
3 extra-large eggs, lightly beaten
150g ( cup) sugar
500ml (2 cups) milk
250ml (1 cup) fresh cream
200g milk chocolate, broken into cubes
Method:
1) Place cornflour in a bowl and whisk in the beaten eggs, then the sugar.
2) Heat the milk and cream in a saucepan. As soon as the milk reaches shivering stage (just before boiling point), remove from heat and whisk into the egg mixture.
3) Return the mixture to the pan and whisk over a medium heat until thickened.
4) Remove from heat, add chocolate and stir until melted.
5) Serve hot or cold. If you like, add a cinnamon stick or vanilla pod to the milk when heating.
