Beer-battered hake

There's nothing quite as good as a fresh piece of hake fillet for making the best fish and chips.

There's nothing quite as good as a fresh piece of hake fillet for making the best fish and chips

Serves: 4

Difficulty: Easy

Time: 40 minutes

Ingredients:

4 pieces of fresh hake, leave the skin on

Flour seasoned with salt and pepper

Batter:

120g (1 cup) flour

5ml (1 tsp) baking powder

2.5ml (½ tsp) salt

300ml beer

Salt and freshly ground black pepper

Oil for deep frying

To serve:

Potato chips or wedges

Lemon halves

Method:

1) For the batter, sift the flour, baking powder and salt into a large bowl. Add the beer and mix through.

2) Preheat the oil for deep-frying.

3) Coat the fish in the seasoned flour. Holding the fish on one end, dip into the batter, ensuring it is well coated, then dip gently into the hot oil. Fry the fish till golden brown on both sides.

4) Serve immediately with chips and lemon.
