An easy-to-make Asian supper best served with noodles or steamed rice.

An easy-to-make Asian supper best served with noodles or steamed rice

Serves: 1

Ingredients:

Large handful of mixed exotic mushrooms (fresh shiitake, enoki, shimeji, and oyster mushrooms all work well)

Square of baking paper (not waxed) about 40cm x 40cm

15ml (1 tbsp) quality soy sauce

10ml (2 tsp) slivered ginger

10ml (2 tsp) sake plus a dash of sugar

10ml (2 tsp) butter

125ml ( cup) chopped spring onion

String (must be old-fashioned, natural-fibre string)

Method:

1) Preheat oven to 180°C.

2) Halve or slice the larger mushrooms.

3) Place baking paper over a bowl and place mushrooms and all other ingredients in the centre. Form a bundle with the paper and close at the top with a length of string. Make a bow, not a knot, to avoid irritation later. Keep the bundle loose.

4) Place into oven-proof dish and bake for about 15 minutes or until you can see the juices bubbling strongly inside.

5) Serve immediately with noodles or steamed rice on the side.
