The times | 26 June, 2012 00:11

Add the potatoes to cold, salted water and bring them to the boil.

Ingredients

  • 5 medium potatoes, peeled and quartered
  • 500g mince
  • 1 onion, finely chopped
  • 1 clove garlic, crushed
  • 10ml steak seasoning mix/spices
  • 3 tomatoes, chopped
  • 250g mixed frozen veggies
  • 1 x 400g tin baked beans in tomato sauce
  • 2 egg yolks
  • 200ml milk

Method

Cook for about 15 minutes, or until a knife inserted into a potato wedge goes in easily.

In a large non-stick frying pan, brown the mince. Add the onion and garlic and sauté for three minutes before adding steak seasoning/ spices, chopped tomatoes, frozen veggies and baked beans. Simmer for 20 minutes.

Preheat the oven to 180C. When the potatoes are soft, drain them and mash them with the egg yolks and milk.

Add the mince mixture to an ovenproof dish and then top with the mash. Smooth over and bake for 20 minutes.
