Watermelon and feta salad with grilled lamb

Ingredients

  • 45ml (3 tbsp) olive oil, plus extra for frying
  • Juice of 1 lemon
  • 1 clove garlic, crushed
  • Handful fresh marjoram and mint leaves
  • 4 lamb chops
  • medium-sized watermelon
  • 200g feta cheese, cubed
  • 200g kalamata olives
  • Freshly ground black pepper

Method

In a large bowl, mix together the olive oil, lemon juice, garlic, marjoram and mint leaves to make a dressing.

Heat a frying pan with a drizzle of oil and cook the chops for 2-4 minutes on each side, depending on how well done you like your lamb. Remove from the heat, toss the hot lamb with the dressing and leave to cool.

Peel and chop the watermelon into big chunks, removing as many seeds as possible. Mix the lamb with the watermelon and olives. Place on a large platter, top with the feta cheese and freshly ground black pepper.
