Spicy summer meatloaf

Ingredients

  • 60g (1 cup) fresh white breadcrumbs
  • 60ml ( cup) milk
  • 4 spring onions, chopped
  • 3 cloves garlic, peeled
  • 4cm fresh root ginger, peeled and chopped
  • Finely grated rind of 1 small lemon or lime
  • 60ml ( cup) fresh chopped coriander or parsley
  • 30ml (2 tbsp) fish sauce
  • Generous pinch of salt
  • 1 extra-large egg white
  • 1kg lean pork or beef mince (or a combination)

Method

Preheat the oven to 180C. Spray a medium-sized loaf pan with cooking spray and line the base with baking paper.

Soak the bread in milk. In a food processor blend spring onions, garlic, ginger, lemon rind, coriander, fish sauce, salt and egg white until smooth. Add the bread and blend briefly. Add the blended mixture to the mince and mix through.

Press into the loaf pan and bake for 50-60 minutes until cooked through and juices run clear. Cool for 15 minutes before slicing and serving with generous dollops of mango salsa.
