Pears in red wine

Pears in red wine Ingredients6 large pears750ml (3 cups) dry red wine500ml (2 cups) water200g (1 cup) caster sugar6 cloves1 stick of cinnamon1 bay leafStrip of orange rindWhipped cream, to serveMethodPeel pears carefully, retaining the stalks. Trim bases if necessary to allow pears to stand snugly in a pan.Combine wine, water and sugar in a pan large enough to hold the pears. Simmer over low heat, stirring until sugar has dissolved. Add cloves, cinnamon, bay leaf and orange rind. Place pears in the syrup and simmer gently for 2 hours or until tender. Gently turn pears during cooking, using two wooden spoons. If syrup evaporates too quickly, add wine mixed with water.Once pears are tender, remove from the heat and allow to stand in the syrup overnight. Strain off spices from syrup and serve pears in a pool of syrup and cream.Serves 6..
