Char-grilled avocados with rosa tomato vinaigrette Ingredients4 firm avocados250ml (1 cup) avocado or olive oil400g rosa tomatoes15ml (1 tbsp) finely chopped fresh rosemary5ml (1 tsp) finely chopped garlicJuice of 1 lemon125ml (cup) red wine vinegar5ml (1 tsp) sugarSalt and pepperLimes, to serveMethodHalve the avocados and remove the pips. Preheat a griddle pan till smoking hot and rub the cut sides of the avocado with oil. Grill avocados cut-side down in the pan for 2 minutes or until nicely char-marked. Remove and refrigerate. Add 15ml (1 tbsp) oil to the pan and fry the tomatoes till they blister. Add the remaining oil to the pan with the rosemary, garlic and lemon juice. Simmer for5 minutes, then remove from the heat and stir in the vinegar, sugar and seasoning. Set aside to reach room temperature. Pour the tomato vinaigrette over the avos and serve with a green salad and sliced limes. Serves 4..
