Xanthos Giannakopoulos says: "Food is personal. The better the produce, the less you have to manipulate it. If you have good, seasonal produce you are halfway there." In my fridge...It's a Mediterranean fridge - always full of mayonnaise, yoghurt, butter, cream, lemons, tomatoes, olives, anchovies and capers. Most annoying eaters?I'm diabetic so I'm very flexible. But, when we're catering mass banquets it can be frustrating when there are 50 different dietary requirements.Dumbest thing I've done in a kitchen?Chasing the chip basket that I dropped into the boiling oil with my hand is only beaten by the time I used my foot to stop a falling granite table from damaging my tiled floor. The bridge of my foot was crushed. My kids cook...My daughter is six and can make cupcakes and toast. My nine-year-old son makes his own hot beverages and is keen on cooking. They both have an international palate and will try everything. My daughter's favourite breakfast is a bowl of steamed cauliflower with mayonnaise.Food-related travel advice...Always try the authentic dishes of the area, even if it means eating locust dipped in chocolate.Worst diet I've ever tried?Eating four small meals a day. Two croissants in the morning followed by toast at 10am meant I picked up 30kg.I've given up trying to master...Pastry. I don't have the patience, I don't like measurements. If I could eat one dish for the rest of my life...Eggs BenedictI don't allow in my house...Two-minute noodles.Currently craving?Poached eggs and mushrooms.Durban Country Club, Isaiah Ntshangase Road, 031-313-1777..
