Avocado chicken waldorf open sandwiches Ingredients200g cooked chicken, skin removed and chopped1 crunchy red apple, cubed with the skin on2 celery sticks, choppedFinely grated rind and juice of 1 small lemon125ml ( cup) quality mayonnaiseSalt and pepper, to taste2 avocados, peeled and choppedHandful pecan nuts or walnuts, chopped, plus extra to serve6 slices rye breadLettuce leavesMethodCombine the chicken, apple, celery, lemon rind and juice, mayonnaise and seasoning and mix.Add the avocado and nuts and combine gently without mushing the avocado.Butter the rye bread (optional) and top each slice with lettuce.Spoon over Waldorf mixture and top with chopped nuts.Serves 6..
