Sweet potato pizza

Sweet potato pizza Ingredients240g (2 cups) cake flour, plus extra10g (1 sachet) instant yeast5ml (1 tsp) sugar10ml (2 tsp) salt250ml (1 cup) lukewarm water30ml (2 tbsp) olive oil, plus extra for drizzling2 large sweet potatoes, sliced and parboiled1 red onion, finely slicedHandful black olives, pittedSalt and black pepper4-5 fronds of fresh rosemaryMethodFor the pizza base, combine the flour, yeast, sugar and salt. In a separate bowl, combine the water and oil and mix gradually into the dry ingredients, adding enough extra flour to make a soft dough. Knead for five minutes, cover, and set aside in a warm place for about 30 minutes.Knock down the dough and roll out into a large circle. Spread with sweet potato slices without overlapping. Sprinkle over onion slices and olives. Season generously, drizzle over a little olive oil and sprinkle with fresh rosemary.Bake at 200°C for 10 -15 minutes till golden brown and cooked through. Serve immediately.Serves 2-4...
