Pea, pomegranate and feta salad IngredientsDressing:60ml (4 tbsp) olive oil45ml (3 tbsp) white wine vinegar5ml (1 tsp) sugarSalt and pepper, to taste1 garlic clove, finely chopped15ml (1 tbsp) water5ml (1 tsp) dry mustard powderSalad:500ml (2 cups) peas, fresh or thawed4 celery sticks, finely slicedHandful fresh mint, finely chopped125ml (half cup) pomegranate seeds (fresh or dried)3 discs feta cheese, cubedHandful fresh pea shoots, to serveBreadsticks, to serveMethodCombine the ingredients for the dressing in a glass bottle with a screw-top lid and shake well.Combine peas, celery, mint, pomegranate seeds and feta in a serving bowl.Pour over dressing and toss to mix.Top with pea shoots and serve with breadsticks.Serves 4-6..
