Banana muffins

Stuck with a bunch of squishy brown bananas no one will eat? Turn them into muffins Ingredients4 large ripe bananas (flavour is better if really ripe), mashed150g ( cup) white sugar1 extra-large egg80g ( cup) butter, melted180g (1 cups) cake flour5ml (1 tsp) baking powder5ml (1 tsp) bicarbonate of sodaPinch of salt30ml (2 tbsp) caster sugar2.5ml ( tsp) cinnamonMethodMix bananas, sugar, egg and butter in a bowl. Sift flour, baking powder, bicarb and salt into a separate bowl, then add to banana mixture and mix lightly till just combined. Spoon mixture into greased or sprayed muffin pans and bake in a preheated oven at 180°C for 20 minutes. Cool for5 minutes in the pan, then turn out onto a cooling rack. Combine caster sugar and cinnamon and sprinkle over muffins while warm. Cool completely before storing in an airtight container, or serve warm with butter. Makes 12...
