Chicken mango and cashew nut curry Ingredients60ml (4 tbsp) olive oil4 deboned chicken breasts, diced1 onion, chopped30ml (2 tbsp) korma curry paste125ml ( cup) water or chicken stock1 x 400g tin coconut cream2 large mangoes, peeled and chopped50g ( cup) cashew nutsFresh coriander, to serveMethodHeat oil in a pan and brown chicken. Add onion and curry paste and cook over medium heat for 8-10 minutes. Add water or stock, coconut cream and mango, reserving a few pieces.Simmer for 20-30 minutes until chicken is cooked through and sauce has thickened.Serve topped with reserved mango, cashew nuts and coriander.
