Crispy coconut prawns with lime mayonnaise Ingredients200ml quality mayonnaise1 garlic clove, finely choppedZest of 1 lime50g desiccated coconut or lightly crushed coconut flakes50g toasted breadcrumbs (Panko from Oriental stores is ideal)Finely grated zest of 1 lemon1 extra-large egg15ml (1 tbsp) waterPinch of salt45ml (3 tbsp) coconut flourOil, for deep-frying24 large prawns, deveined and shelled, tails onLemon wedges, to serveMethodMix mayonnaise with garlic and lime zest and set aside to infuse.Combine the coconut, breadcrumbs and lemon zest together.Lightly beat egg with water and add the salt and place in one bowl.Place coconut flour in separate bowl.Heat oil in wok or deep pan.Taking one prawn at a time by the tail, dip in coconut flour, then egg, and lastly coconut and breadcrumb mixture.Gently fry in batches in the hot oil.Remove and drain on paper towel.Serve prawns with the lime mayonnaise and lemon wedges.Serves 4-6...
