Crunchy layered raw cauliflower salad INGREDIENTSDressing250ml (1 cup) red wine vinegar4 cloves garlic, finely chopped15ml (1 tbsp) cumin seeds5ml (1 tsp) mustard seeds30ml (2 tbsp) olive oilSalad1 head cauliflower, broken into florets3 celery stalks, chopped3 large carrots, roughly grated60g ( cup) chopped hazelnuts (raw or roasted)125ml ( cup) pomegranate seedsMETHODWhisk dressing ingredients together.Place cauliflower in a bowl, pour dressing over and refrigerate overnight.Next day, remove cauliflower and reserve the dressing.Layer cauliflower, celery and carrots in containers.Top with hazelnuts and pomegranate seeds and serve with dressing on the side.Serves 4-6..
