Crunchy layered raw cauliflower salad

Crunchy layered raw cauliflower salad

INGREDIENTS

  • Dressing
  • 250ml (1 cup) red wine vinegar
  • 4 cloves garlic, finely chopped
  • 15ml (1 tbsp) cumin seeds
  • 5ml (1 tsp) mustard seeds
  • 30ml (2 tbsp) olive oil

Salad

  • 1 head cauliflower, broken into florets
  • 3 celery stalks, chopped
  • 3 large carrots, roughly grated
  • 60g ( cup) chopped hazelnuts (raw or roasted)
  • 125ml ( cup) pomegranate seeds

METHOD

Whisk dressing ingredients together.

Place cauliflower in a bowl, pour dressing over and refrigerate overnight.

Next day, remove cauliflower and reserve the dressing.

Layer cauliflower, celery and carrots in containers.

Top with hazelnuts and pomegranate seeds and serve with dressing on the side.

  • Serves 4-6
