Sour cranberry chocolate cookies
Ingredients
1 cup (250ml) butter, softened
1 cup (250ml) caster sugar
1 cup (about 150g) treacle brown sugar
1-2 tsp (5-10ml) vanilla extract or essence
2 extra-large eggs
2 cups (300g) flour
cup (about 100g) good quality cocoa
1 tsp (5ml) bicarbonate of soda
Pinch of salt
1 slab (100g) dark chocolate, roughly chopped into chips
1 cup (250ml) dried cranberries
cup (125ml) chocolate chips
Method
Preheat oven to 180C. Grease and line several baking trays with baking paper.
Beat butter, sugars and vanilla until pale and fluffy.
Add eggs one at a time, beating well after each addition.
Sift over dry ingredients and stir to combine.
Mix through chocolate, cranberries and chocolate chips.
Place ping-pong ball-sized dollops of mixture onto a baking tray, leaving plenty of room for cookies to spread.
Bake for 10 minutes, or until risen and slightly cracked.
Remove cookies from oven and cool (they will collapse slightly on cooling).
Makes about 20 cookies
