Gorgeous gammon festive
Ingredients
3-4kg gammon (bone in)
2 carrots, chopped
1 onion, roughly chopped
A few black peppercorns
24 cloves
cup (125ml) brown sugar
3 tbsp (45ml) orange marmalade
2-3 tbsp (45ml) hot English mustard
- cup (60-125ml) orange juice - enough to help make a gluey consistency
2 tsp (10ml) ginger paste
Method
Preheat oven to 180C.
Place gammon in a saucepan with enough water to cover. Add carrot, onion and peppercorns and simmer for 30 minutes for every 500g.
Remove gammon from liquid and allow to cool slightly. Remove rind/skin with a small, sharp knife.
Score the gammon fat in a diamond pattern and stud with cloves.
Mix together glaze ingredients. Smooth evenly over the cooked gammon.
Roast gammon for 45 minutes, basting frequently with glaze to ensure an even coating.
Once gammon is heated through completely and golden brown, remove from oven and allow to rest for 15 minutes.
Slice and serve warm or at room temperature.
