Tropical crumpets

Ingredients

2 extra-large eggs

250ml (1 cup) milk

250ml (1 cup) coconut milk

360g (3 cups) cake flour

185ml ( cup) sugar

10ml (2 tsp) baking powder

Pinch of bicarbonate of soda

250ml (1 cup) desiccated coconut

15ml (1 tbsp) butter, melted

Tropical fruit, to serve

Syrup, to serve

Method

Beat together the eggs, milk and coconut milk in a jug. Sift the dry ingredients together, adding the coconut. Add the milk mixture and stir well. Mix in the butter.

Preheat a non-stick frying pan and place 30ml (2 tbsp) of batter at a time into the pan, smoothing it into a circle. When bubbles appear on the surface, the crumpet is ready to turn. Cook for a minute or two until golden brown. Serve with fruit and syrup.
