A twist of avocado ritz Ingredients3 large avocadosFinely grated rind and juice of1 lemon3 spring onions, very finely choppedSalt and pepper3ml paprikaTopping300g shrimps, cooked (or use crab meat)85ml ( cup) quality mayonnaise5ml (1 tsp) curry paste1 small red chilli, seeded and finely sliced5ml (1 tsp) fish sauceBlack pepperDash of lime juiceHandful fresh coriander, chopped, plus extra to serveMethodHalve the avocados and remove the pip.
