Stuck with a bunch of squishy brown bananas no one will eat? Turn them into muffins Ingredients4 large ripe bananas (flavour is better if really ripe), mashed150g ( cup) white sugar1 extra-large egg80g ( cup) butter, melted180g (1 cups) cake flour5ml (1 tsp) baking powder5ml (1 tsp) bicarbonate of sodaPinch of salt30ml (2 tbsp) caster sugar2.
