Secrets of a private chef

Pofadder in the Northern Cape has the best lamb in the world, according to private chef Neill Anthony when he is wildly complimented on the main course he has prepared for a lunch party. Fobbing the attention off his skills and onto the ingredients, Anthony downplays how far he's come in the universe of Michelin Star chefs to become one of the most sought-after personal chefs in the business.He's had one-night stands in the kitchens of South Africa's rich and famous and has his own television show, Neill Anthony - The Private Chef, which provides a glimpse into the world of exclusive catering for socialites.He has done his time with Gordon Ramsey at the three-Michelin Star restaurant the Maze Grill in London.''I was his pastry chef and worked from six in the morning until two the following morning. You become a robot," said Anthony''I learnt a lot of important lessons under pressure with some of the world's well-known chefs like Ramsey and Marcus Wareing."You can't offer anything less than perfection. Each plate must be meticulous and exactly the same as the last - you have to be able to do it blindfolded. 'And you have to be able to do it for 20 hours a day, six days a week."Anthony relates some of the most interesting meals he's served.''The fussiest were the English royals.
