Flash-in-the-pan pasta Ingredients5 firm red tomatoes, quartered5ml (1 tsp) sugar10ml (2 tsp) balsamic vinegarLarge handful fresh basil leavesSalt and pepper, to taste500g spaghetti125ml ( cup) freshly grated Parmesan cheese, plus extra to serveMethodUsing a sharp knife, cut the tomatoes into quarters.Scrape out the seeds with a teaspoon and chop flesh into small blocks.Place in a large bowl and toss with the sugar, vinegar, basil and seasoning.Cook pasta in plenty of salted boiling water until al dente and drain, saving 45ml (3 tbsp) of the cooking water.Add reserved cooking water to the tomato mixture and toss with pasta and Parmesan.Serve topped with extra Parmesan...
