Flash-in-the-pan pasta Ingredients5 firm red tomatoes, quartered5ml (1 tsp) sugar10ml (2 tsp) balsamic vinegarLarge handful fresh basil leavesSalt and pepper, to taste500g spaghetti125ml ( cup) freshly grated Parmesan cheese, plus extra to serveMethodUsing a sharp knife, cut the tomatoes into quarters.
