This simple mielie salad is just the thing for a Summer braai or weekend picnic. You can also pile it into avocado halves, season it with a squeeze of lemon juice or vinegar, and serve it spicy corn chips.

This simple mielie salad is just the thing for a Summer braai or weekend picnic. You can also pile it into avocado halves, season it with a squeeze of lemon juice or vinegar, and serve it spicy corn chips.

Ingredients:

2 cans of whole kernel corn, well drained

Splash of olive oil

1 crushed garlic clove

1 tsp dried chilli flakes

1 tsp ground cumin

Salt and pepper, to taste

Method:
1) Toss all the ingredients together to mix, place on a baking tray and roast in the oven at 190°C for 15 minutes, tossing again halfway through roasting. Allow to char slightly around the edges.

2) Allow to cool and serve.
