<p>Nothing screams summer like cold watermelon on the beach. For a chefy twist, cut the fruit into lolly shapes and then dip it into a boozy syrup before coating it with Chilli lime or Cumin coriander salt.</p>

Nothing screams summer like cold watermelon on the beach. For a chefy twist, cut the fruit into lolly shapes and then dip it into a boozy syrup before coating it with Chilli lime or Cumin coriander salt.

Makes: 20

Difficulty: Easy, 20 minutes

Ingredients:

1/2 a watermelon, peeled and cut into lolly shapes

Gin drizzle:

250ml (1 cup) water

50g (¼ cup) sugar

200ml gin

Chilli lime salt:

Zest of 1 lime

1 small red chilli, finely chopped

Large pinch of flaky sea salt

Cumin coriander salt:

15ml (1 tbsp) crushed cumin seeds

15ml (1 tbsp) crushed coriander seeds

7.5ml (1 tsp) cayenne pepper

Large pinch of flaky sea salt

Method:

1) Stick each lolly-shaped piece of watermelon on an ice-cream stick.

2) For the gin drizzle, combine the water and sugar in a saucepan over medium heat and stir until the sugar has melted. Reduce heat and simmer until syrupy. Remove from heat, cool and stir in the gin. Transfer to a container.

3) Combine the ingredients for the chilli lime salt in a bowl, and the ingredients for the cumin coriander salt in another bowl.

4) Dip watermelon lollies in then gin drizzle and then one of the flavoured salts.
