Peanut butter toffee bars

Delight the hordes by adding these pimped-up Rice Krispie treats to your party table. Not only are they irresistible, but they can also be whipped up in the microwave.

Makes: 18

Ingredients:

200g toffees

60ml (¼ cup) water

125ml (½ cup) smooth peanut butter

100g Rice Krispies

50g roasted peanuts

30ml (2 tbsp) raisins

Topping:

100g milk chocolate, broken into blocks

60ml (¼ cup) smooth peanut butter

30ml (2 tbsp) butter

Method:

1) In a large glass bowl, combine the toffees, water and peanut butter and microwave on medium for about 5-7 minutes, stirring every 2 minutes, until melted.

2) Stir in the Rice Krispies, peanuts and raisins. Press the mixture into a 30x20cm shallow baking dish or brownie pan.

3) For the topping, combine the chocolate, peanut butter and butter in a bowl and microwave on medium for about 3 minutes stirring every minute, until melted.

4) Pour the topping over the Rice Krispie mixture in the pan, smooth with a spatula and allow to cool completely.

5) When cold, cut into bars or triangles with a sharp knife.

Cook's tip: You could use mint toffees to make a peppermint version of this tea-time treat.
