This quiche makes a satisfying supper option when you don't feel like cooking anything too complicated
Serves: 6
Ingredients:
30ml (2 tbsp) oil
1 large onion, finely chopped
1 garlic clove, crushed
1 green pepper, seeded and chopped
1 red pepper, seeded and chopped
200g (1 punnet) button mushrooms, sliced
125g ham/gammon or bacon*, cubed
100g mature cheddar cheese, grated
3 extra-large eggs, lightly beaten
30ml (2 tbsp) cake flour
5ml (1 tsp) mustard powder
500ml (2 cups) milk
Pinch of mixed dried herbs
Handful fresh parsley, finely chopped
Salt and pepper, to taste

Method:
1) Heat the oil in a pan and fry the onion till soft and golden.
2) Add the garlic and peppers and fry for 2-3 minutes.
3) Add the mushrooms and fry till the liquid has cooked away.
4) Add the ham/gammon or bacon and fry for a couple of minutes.
5) Using a slotted spoon, transfer the mixture to a greased 2-litre ovenproof dish. Sprinkle cheese over the top.
6) In a bowl, combine the eggs, flour and mustard powder. Whisk well until smooth. Add the milk, dried herbs, parsley and seasoning and mix well.
7) Pour the egg mixture over the onion and cheese mixture. Bake at 180°C for 45 minutes until puffed up and golden brown. Slice and serve warm.
*Cook's tip: Don't eat pork?You can replace the ham/gammon or bacon with 1 can of well-drained flaked tuna.
