Serves: 4 - 6

Difficulty: Easy

Ingredients:

1 medium loaf of bread (like a Focaccia or Ciabatta)

1 whole Camembert cheese

¼ cup olive oil

2 tsp sea salt flakes

1 Tbsp fresh thyme leaves

Honey, for drizzling

Dukkah, for sprinkling

Sprigs of thyme, for serving

Method:

1) Preheat oven to 180°C.

2) Place the cheese on top of the bread, positioning it in the middle of the loaf. Using a knife, cut a circle around the cheese. Remove the bread within the circle, leaving the bottom crust intact.

3) Carefully slice the bread, on either side of the circle, into bite-sized squares (about 2cm x 2cm), making sure not to cut through the bottom crust.

4) Place the bread on a baking tray.

5) Turn the cheese on its side and cut the top and bottom off. Place it in the hole in the bread.

6) Mix the olive oil, salt and thyme together.

7) Drizzle the bread with the olive oil mix, letting the oil drip between the cut squares.

8) Bake for about 20 minutes until the cheese is melted. As soon as the bread comes out of the oven, drizzle liberally with honey, sprinkle with the dukkah and thyme sprigs and serve immediately.
