RECIPE: Quick oven-baked date doughnuts

With no yeast and no deep frying needed, these sugar-and-spice-coated doughnuts are quick and easy to make

Makes: 12
Ingredients:
180g (250ml) soft dates, pitted, chopped and soaked in 60ml (4 tbsp) boiling water
185g (1 ¼ cups) flour, sifted
12,5ml (2 ½ tsp) baking powder
150g (¾ cup) caster sugar
2 large eggs
180ml (¾ cup) milk
125g butter, melted
5ml (1 tsp) vanilla extract
Spiced sugar coating:
100g caster sugar
5ml (1 tsp) mixed spice
Method:
1) Preheat the oven to 160°C.
2) Blend the soaked dates in blender till smooth.
3) Using an electric mixer whisk the flour, baking powder, caster sugar, eggs, milk, butter, vanilla and date mixture till smooth.
4) Spray a doughnut pan with cooking spray and spoon or pipe the mixture into the pans so they are ¾ full.
5) Bake for 12-15 minutes till golden brown and cooked through.
6) Coat in the combined sugar and spice mixture whilst warm...
